Honestly, you can do whatever you want. She is your OC after all. And if you get annoyed about there being two OCs that look similar, I don't think your doing anything wrong. I've noticed that most people try to go for the more exotic coat colorings, and it's just a fact that there aren't that many exotically colored pictures of horses on the internet (which is kinda why both Honeyfall and Snowfrost are relatively plain in color). I don't think there is anything wrong with tying to use exotic looking horse pictures for OC inspiration, I actually think it's smart so that your OCs can stand about a bit, but you have to be ready to let someone else make a similar looking character.

On the other 'wing' I do see it can be quite annoying to have someone make a character that looks exactly like one of your characters, especially if it's your 'mane' character. One idea that I do have that might help deter this, would be to make your OC more visible. Like, for instance having a picture of them as your profile pic, or posting a lot of fan art featuring that character. I think this might help, because like I said before, most people like their OCs to stand out a bit, and if they can easily see that someone is already using an OC that looks similar, there's a greater chance of them not using that specific color combo.
